This cuvée is a field-blend of three varieties from Tinian, two whites (Aspro Potamisi and Rozaki at 40% each) and one red (Mavro Potamisi at 20%). A tribute to the island's traditional farm wine, where all the varieties are blended together to guarantee each family wine through the winter, the storage jar always emptied at Easter, along with the roast lamb. Pappou means grandfather in Greek, the wine is named after this important figure of the family, who on this island, as in every culture in the world, is the transmitter of traditions, along with the yaya, the grandmother.
After our choice of the common moment of satisfactory ripeness of all three grapes, they are fermented together and the wine ages on its lees for twelve months.
With its deep hibiscus red, it is difficult to classify between a thirst-quenching primeur or spicy rosé. Floral on the nose, fluid and herbal on the palate, it allows both the rusticity of the windswept mineral environment and the fresh, wild aromatic plants found throughout the vineyards to speak. Grilled mushrooms, white meat, river fish, or crispy pastry are among the common combinations that readily accompany this wine.
