The grapes are macerated in whole bunches for two weeks before being slowly and gently pressed with a traditional wooden press. The wine is aged in old wooden barrels for just over a year, then in bottle. Thanks to the contact with the skins, the wine shows an exciting structure between fruit and minerality. Delicate and delicious.
