Pascal Potaire and Moses Gaddouche are based in Touraine and have a speciality: they only produce sparkling wines, according to the time-honoured method and everything without sulphur. This requires a rigorous harvest in the vineyards to process only perfect grapes. They own 2.3 acres and buy in about 4 acres of grapes from a handful of organic growers, but they harvest them themselves. This gives them the opportunity to work with a variety of Loire grapes, Chenin Blanc, Menu Pineau, Chardonnay, Sauvignon Blanc, Gamay, Côt, Cabernet Franc and Pineau D'Aunis.
The Méthode Ancestrale is as simple as it is difficult to implement. The wine is bottled halfway through fermentation to finish. During this process, the carbon dioxide produced is trapped and gives the wine its perlage.
Pascal and Moses have become experts at making Pet'Nat'. Their sparkling wines are always elegant and marked by the beautiful minerality of the limestone soils where the grapes grow.
