Laurent Saillard discovered natural wine for himself in America. In his "first life" he ran a restaurant in New York, where he learned to appreciate and defend natural wines. When he returned to France, he found himself in Touraine learning the winemaking craft with Didier Barouillet & Catherine Roussel of Domaine Clos Roche Blanche. Also with Noëlla Morantin, whose vineyard was created from vines leased from Clos Roche Blanche. Then Laurent himself took over part of Clos Roche Blanche's vineyards to start his own wine project in 2012. Today he has 6 hectares and since 2020 he has for the first time some cuvées in Négoce, organic cultivated grapes that he found in the region.
We drink Laurent's wines for many years, always with the same pleasure. He vinifies his wines based on freshness, fruit and minerality and the result reflects exactly that. Laurent has not forgotten his work in gastronomy, it feels like he makes wines for the wine bar, total in their satisfaction, nothing more, nothing less. Bottles that are opened without hesitation. Have one ready when friends or relatives come over, because his wines always bring everyone together.
