For Sylvie and Thierry, the 2019 adventure has begun after leaving their restaurant and Amsterdam behind to focus their work on a vineyard in Lantignié, a commune in the Beaujolais. That's about 8 hectares of land in their care, including 5.5 hectares on which vines grow around 50 years old.
Their aim is to promote a large ecosystem almost on the entirety of their terrain. To increase the biodiversity of their vineyards, they started by planting more than 100 fruit and nut trees. The vines are treated exclusively with herbal tea from their own gardens and their flock of sheep takes care of tilling the soil.
