    After many years working for Gianmarco and Clementine of Le Coste Jacopo Battista founded the company in 2012. Azienda Agricola Ajola near Sugano, a small village between Orvieto and Lago di Bolsena, in the Umbria region framed by Lazio, Marche and Tuscany. In addition to three and a half hectares with vines up to seventy-five years old, he also cultivates olives and fruit. Everything grows at 500 meters above sea level on black and red sandy loam soils of volcanic origin, not far from a still active volcano. The vineyard had been neglected for decades and he spent several years gently regenerating the vines.
    Jacopo is experimental in the production of his wines, using stainless steel tanks as well as barrels and amphorae. Ajola's wines are refreshing, wild, pure and aromatic.
